We purchase based on the two harvests of olives a year, the Northern Hemisphere Italy Spain, Greece and Portugal and the Southern Hemisphere Chili, Argentina and Australia. Our balsamic vinegars are both dark and white and are produced in and imported from Modena, Italy. Made from the Trebbiano grape, our balsamic vinegar is aged in the Solera method of progressive barrels made from oak, chestnut, cherry and ash. This process ensures a rich density of flavor characteristics. Our Balsamic Vinegars are aged from 12 years up to 18 years!
